Tantalus 2006 Riesling Icewine is silky smooth with an intense honeyed sweetness balanced by crisp acidity.
Hand-picked in the early morning hours of November 28th, our 28 year old Riesling vines were emptied of bunches and the fruit put immediately to press. This process was done with efficient speed outside, keeping the ambient temperature of the grapes below -8° C. The water content in the fruit remained frozen during the press cycle, extracting only a tiny drop of sweet concentrated juice from each grape. The juice was then fermented slowly for several months, resulting in a dessert wine bursting with flavours of tropical fruit, apricot and honey.
