Pinot Noir 2006

Our 2007 Pinot Noir displays an enticing blend of ripe raspberry, subtle cedar and rose aromas. The palate is rich in flavours of black cherry, red currant and allspice. Subtle vanilla leaf and hints of earthiness linger on the finish.

2007 presented itself as a challenging growing season. Very cold winter temperatures were followed by rainfall during spring flowering. Despite the early growing season conditions, the latter part of the year proved true to Okanagan form, with continuous warm sunny days that extended well into later October.

The 2007 Pinot Noir is comprised of fruit hand picked from traditional German clones planted in 1985, producing less than 2.5 tons per acre and modern French Dijon clones planted in 2005 and 2006, producing 1 ton per acre. The grape clusters were picked at their optimum ripeness into small 30 pound containers and immediately transported to the winery.

Ferments were performed in 2 ton steel tanks and were separated into batches according to clone, yeast type (some native), whole fruit clusters with stems on, and others de-stemmed. Ferments lasted 17 - 19 days, during which time the grapes and juice were gently hand mixed to achieve excellent flavour, structure and colour.

The result of each separate ferment was then carefully paired into premium French oak barrels, primarily Damy and Cadus, for 11 months. Bottling took place on September 11, 2008 and the wine was then allowed to rest and mature before release.
