There are not many things in life that benefit from sitting around in dusty, dark caves for six years, but sparkling wine is one of them.
From our series of sparkling wines, the Classic Cuvée exhibits the archetypal nuances of vintage Champagne and consists of the three traditional varieties hailing from the region: Pinot Noir, Pinot Meunier and Chardonnay. The colour takes on a pale, lemon skin hue while the medium-to-fine bead persists post-cork popping. Notes of roasted apple and almond alongside a hint of buttery, toasted brioche rise out of the glass with the delicate bubbles.
The palate is lush and engaging, tasting of lemon meringue and apple crisp. It's not all fruit, however, savoury notes abound such as fresh sourdough and marmite-a result of the wine resting for six years on its yeast.
This sparkling wine was made in the traditional method and was disgorged in July of 2010, just before its release. Our 2009 Rosé was used as a liqueur dosage to balance the palate leaving 9 grams of residual sugar per litre of wine. This aided in freshening the wine after its long sabbatical.
